Have Fork, Will Travel

Last Monday in the @fs_foodscienceclub booth at lunch until spring. JK, I’ll probably still hang out until mid-December. Forgot my bag at home so had to get creative. Stop by between 12-1 today if you’re on campus.

Have leftover sweet potatoes? Mash them up with a little butter and brown sugar, make a sweet biscuit dough, and turn them into sweet potato pockets. This side dish definitely deserves an encore. Perfect for a quick brunch when paired with ham or bacon.

Loving my simple, 2 hour thanksgiving dinner. I brined and spatchcocked the bird, used the microwave to cook the sweet potato, and the toaster oven for everything but the bird. Instead of broth, I used coconut milk to cook the bird and vegetables. The best part, I now have ready-made soup base to make a quick dinner after the concert on Sunday.

Brined and curried turkey with veggies all set to carve and serve.

Not bad time considering it’s been at least five years since I’ve done a 5k. Plus I don’t run, I walk.

Time for the #turkeydayrun with Nicole. No, I don’t run, but I do walk fast. 🤓🦃
